Whipped Feta Mousse

The combination of sweet and a little salty never gets old. This quick and decadent recipe can be a showstopper for an evening with friends or a lush snack for when you want to indulge. No one would ever suspect that feta cheese can become something so irresistibly delicious and taste like dessert at the same time.


Prep: 2 minutes

Total Time: 10 minutes

Yield: 4 to 6 servings


Ingredients

8 oz. crumbled feta cheese

4 oz. cream cheese, softened, room temperature

1 tsp, orange zest

1/4 cup heavy cream, more as needed

1/4 cup raw honey

Garnish: crushed almonds, fresh blueberries, thai basil, extra virgin olive oil

Directions

1. In a stand mixer using a whip attachment on medium high speed, combine feta, cream cheese, and orange zest until somewhat smooth (I like to still see pebbles of feta in my mousse for little bursts of salty goodness).

2. Scrape down the sides of the mixer bowl and add honey. Whip until combined.

3. Fold in the heavy cream with a wooden spoon.

4. Spoon onto a plate and smear in a circular motion creating a well for the garnishes.

5. Sprinkle with almonds, fresh blueberries, chopped Thai basil, and drizzle with extra virgin olive oil.

6. Serve with baguette crostinis and enjoy!


My only advice to you is to not limit your choice of toppings. For something a little more savory, I like to add kalamata olives, grape tomatoes, chickpeas, chopped cucumbers, and chopped roasted red peppers for a more Mediterranean flair.
