Trying to come up with a simple but elegant appetizer using what you have in your refrigerator may seem like a challenge. Here's one that has an unexpected tart and earthy combination that will have you eating the whole plate before your guests event try one (don't judge me....lol).

Ingredients
11 oz. goat cheese log
2 tbsp. fresh italian parsley, chopped
2 1/2 tsp. fresh thyme, chopped
1/2 tsp. lemon zest
1/4 cup heavy cream (more if needed)
1 baguette, 1/4 slices on a bias
1-2 tbsp. extra virgin olive oil
Garnish: fresh blackberries, fresh blueberries, mint, balsamic reduction (1 cup of balsamic vinegar and 1 tbsp. honey simmered on the stove until thickened)

Directions
1. Preheat oven to 400 degrees Fahrenheit.
2. Arrange the bread slices on a heavy sheet pan. Drizzle olive oil over the bread slices.
3. Bake until the crostinis are pale golden, about 6 to 8 minutes.
4. In a stand mixer using a paddle attachment on medium high speed, add the goat cheese and slowly pour in the heavy cream while mixer is running. Mix until well combined and cheese becomes a thick but creamy paste.
5. Remove bowl from mixer and add fresh herbs, lemon zest, salt, and pepper using the rubber spatula to mix and scrape down sides.
6. Using a small spoon, spread about 1 teaspoon of the herb cheese mixture onto a crostini. Garnish with berries and mint. Repeat on all crostinis.
7. Drizzle balsamic reduction over top for a touch of sweet.
